Parmesan Linguine with Asparagus
Cook linguine pasta according to package directions.
If using fresh asparagus not canned, stem until tender and
set aside with pasta. In large skillet fry bacon until crispy.
Reserve 2 teaspoons of bacon drippings and remove bacon from pan.
Cool and crumble bacon in bits. Add onion, garlic, oregano and drippings to pan.
Cook about 4 minutes or until onions are golden brown.
Add tomatoes and cook another 2 minutes.
Add chicken broth and bring to a boil.
Stir in butter, salt, pepper and remove from heat.
Place asparagus and pasta in a large bowl, add tomato mixture, lemon juice and toss.
Top with bacon bits and shredded parmesan cheese.
Great served with hot garlic bread.
