Parmesan Linguine with Asparagus

Ingredients Grocery Shopping list:
10 ounces refrigerated linguine
3 cups asparagus tips
3 slices uncooked bacon
1/2 cup onion, chopped
1 clove garlic, minced
1 teaspoon dried oregano
2 cups cherry tomatoes
3/4 cup chicken broth
1 tablespoon butter
1/4 teaspoon salt and pepper
2 tablespoons lemon juice
1/2 cup Parmesan cheese, shredded


How To Prepare Your Linguine

Cook linguine pasta according to package directions. If using fresh asparagus not canned, stem until tender and set aside with pasta. In large skillet fry bacon until crispy. Reserve 2 teaspoons of bacon drippings and remove bacon from pan. Cool and crumble bacon in bits. Add onion, garlic, oregano and drippings to pan. Cook about 4 minutes or until onions are golden brown. Add tomatoes and cook another 2 minutes. Add chicken broth and bring to a boil. Stir in butter, salt, pepper and remove from heat. Place asparagus and pasta in a large bowl, add tomato mixture, lemon juice and toss. Top with bacon bits and shredded parmesan cheese. Great served with hot garlic bread.

Garlic Bread
1 loaf of French bread
1 large clove garlic, crushed
1/2 a cup softened butter or margarine.
Some chopped fresh parsley.
Preparation
First cut the bread into slices or in half lengthwise. Combine the soft butter and garlic and spread the mixture on the slices or the tops of halved loaf. Sprinkle chopped fresh parsley. Wrap in heavy-duty foil and place in an oven set to 350 degrees until heated through, about 15 minutes.

Apple Cake Recipe

Ingredients:
1 cup whole wheat flour
4 ounces low fat cream cheese
1 large egg
2 teaspoons brown sugar
1 1/2 teaspoons baking powder
1 teaspoon vanilla extract
Filling:
2 cups stewed apples
Topping:
4 ounces low-fat cream cheese
2 teaspoons sugar
zest of half lemon
4 ounces ricotta cheese
1/2 teaspoon ground cinnamon

Baking your cake
Shift whole wheat flour, baking powder into mixing bowl. Return sifted bran to flour. Add soften and beat cheese until smooth. Add egg and vanilla and beat again. Add sugar and mix well. Gradually blend flour and cheese mixture until you have soft dough. Knead on floured board into ball. Divide into 3 equal pieces and roll out into 10 inch rounds. Place on light greased baking sheets. Bake for 12 minutes in preheated 350° oven. Cool on cake rakes.
Filling:
Add lemon zest and cinnamon to cold stewed apples and mix.
Topping:
Soften cream cheese until smooth. Add sugar, lemon zest, ricotta and cinnamon, mix well.
Place one layer of cake on serving plate. Cover with half of the apple filling. Cover with the second layer, spread with remaining apple. Place third layer on top. Spread topping mixture on top and sides of cake.
