Twice Baked Potatoes

Ingredients:
4 large potatoes
Olive oil
1/2 cup sour cream
1/2 cup milk
2 Tbsp butter, softened
1 cup grated cheddar cheese
4 strips bacon, cooked crumbled
1/4 cup chopped green onion

Preparing your recipe

Preheat the oven to 400°. Clean under running water. Poke each potato in several places with a fork. Bake the potatoes for 1 hour and 15 minutes, or until the potatoes are cooked through. Bake directly on the middle rack of the oven.
Microwave: 10 minutes on high heat for 2 potatoes.

Let the potatoes to cool. Slice potatoes lengthwise in half. Use a spoon to scoop out the inside, leaving just a little of the potato on the skin. In mixing bowl beat and mash the scooped out potato, sour cream, milk and butter. Spoon mashed filling into the potato skins. Sprinkle the tops of the stuffed potatoes with grated cheddar cheese and bacon crumbs. Bake at 350 ° 10 to 15 minutes until heated through.
