Homemade Cheesecake Recipe
A wonderful wheat cracker crumb crust with crushed almonds. This delicious rich cheese cake is topped with strawberries and cinnamon.

Strawberry Lemon Cheesecake Recipe

Ingredients:
2 ounces almonds, crushed
1 cup crumbled whole wheat cracker crumbs
1 teaspoon melted butter
2 teaspoons water
1 teaspoon cinnamon
Filling:
10 ounces butter milk
9 ounces ricotta cheese
1 1/2 teaspoons vanilla extract
2 tablespoons sugar
juice from 2 lemons
zest of 1 lemon
1 tablespoon powdered gelatin
2 tablespoons water


Topping:
3/4 cup sliced fresh strawberries
2 teaspoons cinnamon

Preparing your recipe
Make this recipe a day ahead to give your filling time to set. Combine all cracker crumb crust ingredients. Press into pie dish and refrigerate for 30 minutes. Mix buttermilk with ricotta cheese, lemon zest, vanilla, lemon juice and sugar. Beat mixture until fluffy. Dissolve gelatin in hot water. Cool slightly and fold into milk mixture. Pour into your pie shell and refrigerate until set. Top with strawberries and cinnamon before serving.
