Eggplant Casserole

Ingredients:
1 large eggplant, peeled and sliced
3 large tomatoes, sliced thin
1 onion, sliced thin
1 clove garlic, crushed
1 cup tomato juice


Preparing your recipe
Layer eggplant, onion and tomatoes in casserole dish. Pour over tomato juice, garlic, salt and pepper to taste. Baked at 350° uncovered for 45 minutes.
