Traditional Pie
Homemade pumpkin pie filling made with fresh pumpkin is an easy fresh addition. Wash and quarter a small pumpkin. Cook 30 minutes in steamer or until pumpkin is tender. Scoop pumpkin from shell and mash , salt to taste. Use instead of canned pumpkin pie filling for a farm fresh pie.

Pumpkin Pie

Ingredients:
1 16oz. can pumpkin
1 cup milk
1/2 cup sugar
3 egg yolks, beaten
3 egg whites, beaten
1/4 tsp. cloves
1/4 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. salt


Preparing your recipe
Place an uncooked pie pastry shell in 9 inch pie pan and flute edges. In bowl, mix together pumpkin and milk. Add sugar, cinnamon and egg yolks. Add all spices and mix well. Fold in egg whites and add pumpkin pie filling to pie shell. Bake at 450° for 10 minutes , reduce heat to 375° and bake your pumpkin pie another 20 minutes or until pumpkin filling is firm. Refrigerate until cool, serve topped with whipped cream.
