Stir-fry Chicken

Ingredients:
3 boneless, skinless chicken breasts, sliced
1/4 cup reduced-sodium soy sauce, divided
2 cloves garlic, minced
2 tablespoons vegetable oil
1 teaspoon ground ginger
2 tablespoons cornstarch
3 cups broccoli, tops
1 tablespoon brown sugar
1 bell pepper, seeded and diced
1 1/2 cups chicken broth
2 teaspoons oil
1/2 cup roasted cashews


Preparing your recipe

In wok or large skillet heat vegetable oil using medium-high heat. Stir-fry chicken, 2 tablespoons soy sauce, garlic and ginger, 4 to 5 minutes until chicken is no longer pink. Add broccoli and bell pepper; stir-fry 2 minutes. Add chicken broth, brown sugar and sesame oil. Cook 2 to 3 minutes until it begins to bubble. Stir in cornstarch mixture; reduce heat to medium. Cook 3 minutes or until sauce thickens. Stir in cashews. Serve over cooked rice.
